ORGANIC GARLIC-ONION BUTTER. YUM!

When I think of onion and garlic, that good ole question comes up in my mind; “How do you do that?” With onion and garlic, I heard that question many times. “It is so clean… it is so flavorful, sweet… how do you do that?”

The answer to that question is driven by why we use these ingredients. Onion and garlic are very similar to salt in the way they unlock flavor in foods. They excite our taste buds and open up the receptors to flavor. Onion is the primary ingredient in mirepoix, the flavor base for sauces stocks, soups, and stews. For barbeque, a minced or granulated garlic rub imparts superior flavor. When baking, garlic and onion powder, granules or minced, will infuse flavor much more evenly than when using it fresh.

In order to maximize flavor and appearance, we need to understand plant structure and chemistry.

Onion and garlic are alliums; a genus of flowering plants including many species such as shallots and chives. When grown, harvested, dried, promptly milled, and freshly packaged, these products have extraordinary flavor potential.
So how do we do it?

As with any agricultural product, everything starts with the soil. Organic soil science replicates the inherent process of the natural growing conditions you would find it in a virgin forest. The rich soil base material is continually amended with vibrant organic matter. This creates sustainable life force. In addition, we test and amend to maximize the growth. Onion and garlic’s characteristic flavor and aroma is dependent on sulfur in the soil, so we make sure the natural and organic sulphate levels are adequate for flavor pungency.

The right growing time duration is critical to maximum plant sugar production. How the onion and garlic is harvested, transported, washed and prepared for dehydrating is paramount for the condensed flavor we achieve. The enzymes and amino acids combine to create flavor intensity and must be preserved with fast, fresh, effective processing. State of the art dryers will ensure the consistent, proper heat that will mellow and preserve the flavor and beautiful color and appearance.
